If you’re anything like me you will carve pumpkins every year for Halloween with the kids – it’s one of those fun, rainy day activities that seems to go down a treat in our house. Yes, we have the fancy pants pumpkins that mummy doesn’t let anyone touch, but we also have pumpkins for carving!

Never one to be ok with waste, I always feel like I have to DO something with the left over pumkin, I mean, I can’t just bin it all and I don’t have a compost heap, so that leaves me fave thing: cooking.

Pumpkin is one of those things I think you either love or you hate, and it’s so easy to associate it with pumpkin “spice” which is more spices and flavours and you lose the actual pumpkin (or so I think anyway). Ahead of carving season, I’ve pulled together some of the best recipes for using up those pumpkin innards!

Pumpkin Cauliflower Gratin

This looks delish, from Well and Full, it’s the kind of thing I would put on the meal planner with some bacon or sausages.

Pumpkin Chilli

You can’t go wrong with a classic Autumn recipe of chilli – whether you make it con carne or veggie, it’s always a winner. I love this twist from Will Cook for Smiles which adds in some yummy chunks of pumpkin. Perfect for anyone who doesn’t normally like pumpkins! This will make for great leftovers too!

Morrocan Pumpkin Chicken

This recipe from SunKissed kitchen sounds like something a little different from the usual pumpkin soup or pie and it’s absolutely something I think my kids would devour.
